41/89 I ran out of cornstarch doing the filling, so I used xantham gum, and it substituted perfectly. This is another bake using fresh blueberries picked by my friend. A helpful hint is to freeze the filling before putting it into the pastry, so that it keeps the pastry really cold until baking.

I was confused at first why this was in the breakfast section of the book. But after trying it, it’s really not that sweet. So it’s perfect for breakfast. It’s a thick batter that goes on the dough and then gets baked. It has an incredibly unique texture!
