Rosemary and Garlic Focaccia

This is an easy recipe to make! After the final proof when you dimple the dough, you literally can’t be too rough with dough. You can press so hard you make a hole all the way to the pan underneath, and it’ll still bake just fine.

(I finally figured out how to make the images full sized and not as thumbnails!)

Pineapple Upside-down Cake

This was an excellent recipe! The cake was very spices and had toasted pecans blended in. Plus a rum caramel and poached fresh pineapple!

Poach the pineapples in brown sugar, water, and rum. I used Zaya aged rum
Once the pineapple is cooked, remove the pieces, add butter to the liquid, then reduce to a caramel. Pour that in the cake pan, then line it with the cooked pineapple.
Add the dry ingredients to the wet, alternating a bit of dry with a bit of Buttermilk.
The finished cake!
9/10. The caramel makes the top cm of the cake quite moist. But both the cake and topping are really good!

Carrot Cake with Brown Butter Cream Cheese Icing and Maple Walnut Sticky-Buns

  • Carrot Cake first! Cake and wet ingredients in one bowl
  • Dry ingredients in the other
  • Bake in 3 pams
  • Brown butter and cream cheese
  • Add the powdered sugar and vanilla
  • Maple Walnut Sticky Buns! Maple syrup, butter, and vanilla
  • Add the sauce and toasted walnuts to a baking pan
  • Bloom the yeast
  • Let the sweet yeasted dough proof overnight
  • Roll out the dough, and sprinkle brown sugar, cardamom, and orange zest
  • Flip over once slightly cooled and serve!

Flourless Chocolate Cake

This one’s for my friends that are gluten free. It’s amazing and super easy. It’s like a mix between a mousse and a cake.

  • Combine chocolate, Disaronno, and oil in a double boiler.
  • Oil and sugar a springform pan
  • Make a stiff peaked meringue
  • Add almond flour and egg yolks to the chocolate mixture
  • Fold in the meringue
  • Pour into the springform and sprinkle sugar on top
  • Serve with some whipped Cream!

Rhubarb Loaf Cake

  • What it should look like
  • Sauté 2/3 of the rhubarb
  • Flour, baking powder, and salt
  • Mix in some baking soda to neutralize the rhubarb a bit. It’ll go gray
  • Sugar, eggs, and butter
  • Mix in Greek yoghurt, vanilla, and remaining rhubarb
  • Mix into the dry and add the sautéed rhubarb
  • Bake at 350 for an hour, then 325 for 20-30 min
  • 8.5/10!

Funfetti Cake

  • Cream cheese icing!
  • Flour, sugar, baking powder and soda, and salt
  • Add oil and vutter
  • Mix!
  • Add the eggs and vanilla and almond extracts in 2 batches
  • Divide into 3 pans
  • Let the icing cool a bit then finish icing!
Made this for my friend Jordan as a belated birthday present! It turned out great and the icing was delicious!

Strawberry Rhubarb Pavlova and Coconut Buns

  • Whip the egg whites
  • Pre baked
  • Cool in the oven for an hour before removing
  • Rhubarb, water, sugar, wine, lemon, and a vanilla bean
  • Coconut bun assembly!
  • Cream, milk, and yeast
  • Add the flour, baking powder, and salt
  • Let the dough proof
  • Move the filling to a larger bowl, because the first bowl is way too small
  • Spread the filling on flattened dough. Roll like a cigar, then proof
