This was an excellent recipe! The cake was very spices and had toasted pecans blended in. Plus a rum caramel and poached fresh pineapple!
Poach the pineapples in brown sugar, water, and rum. I used Zaya aged rum
Once the pineapple is cooked, remove the pieces, add butter to the liquid, then reduce to a caramel. Pour that in the cake pan, then line it with the cooked pineapple.
Add the dry ingredients to the wet, alternating a bit of dry with a bit of Buttermilk.

9/10. The caramel makes the top cm of the cake quite moist. But both the cake and topping are really good!
